NOTE: This drink uses an easy-to-make Ginger Sugar Syrup and I have included its recipe below.

Prepare a tall glass by rimming it with Ginger Syrup* and Sugar. Quarter a Lime and squeeze 3 wedges into glass, toss in the peel, and add 7 to 10 mint leaves. Muddle the Mint and the Lime peel well. Fill glass with Ice.

Next, add the Rum, Lemon liqueur (preferably Lemoncello), and the Ginger Syrup* into a shaker half full of Ice and shake vigorously. Strain into prepared glass with Lime and Mint mixture, top off with the Carbonated Water and stir well. Garnish with Mint sprig and Lime slice.

*TO MAKE GINGER SYRUP:
Dissolve 1c Sugar in 1C boiling Water. Turn heat down to low and add a 4 inch piece of ginger that has been very thinly sliced and simmer for about 20 to 30 minutes. Cool completely and then strain.

First, make some lemonade - MAKE it, as in no powder, no concentrate - squeeze some lemons, and sugar to taste. Drop a few lemon slices in for good measure. No vodka yet!

This is the important part, and what seperates it from your typical Lemon Drop - pour the lemonade in some martini glasses (saving space for the vodka), and put them in the freezer. You want to take them out when the top is frozen, but there's still liquid underneath. Check after half an hour.

Now, crack the icy top layer, add the vodka, and stir GENTLY. The drink should retain an icy texture. Think "frost".

For best results, consume on a polo ground in July.

NOTE
Add some sugar on the rim, if you're sitll convinced this is a lemon drop.

THANKS TO
Greg, who invented this seasonal favorite. I only gave it a name.

This is the perfect drink for a spring or summer morning, it wakes you up and tastes really fresh.

It's also the perfect evening cocktail.

Pour the mango rum (coconut rum also works well with this) into a (chilled) glass, then add pure (not concentrated) passion fruit juice and pineapple juice. Adding iced tea also gives the drink a really nice flavour.

Serve with a few cubes of ice if desired, and a slice of lemon and/or lime.
