			<description><![CDATA[In a small bowl, add a small amount of refined sugar to the heavy cream and whip until it is thickened, but not forming peaks.  Keep the whipped cream chilled.  In an Irish coffee glass (or another smallish glass) combine 3 oz. of good Irish whiskey with 2 Tbsp. brown sugar and allow sugar to dissolve*†.  Add 3 oz. of freshly brewed strong coffee or espresso.  Layer the whipped cream carefully over the coffee/whiskey to the top of the glass, using a spoon to disperse it over the top without mixing.

Notes:
*You may heat the mixture to facilitate this.  If you have an espresso machine, you can use that to make the coffee/espresso and use the steamer to heat the whiskey and sugar.

			<description><![CDATA[This is an infusion drink (made in a batch, not as a single cocktail) that needs to be prepared a few days in advance of serving. Be careful as it can sneak up on you!

3 cups Stoli vodka (about a fifth)
1 cup Stoli Vanilla vodka
1 cup Malibu Rum (or other coconut rum)
1 large pineapple
1/4 cup of sugar

Core, peel, and slice pineapple and place in a large jar. In a separate container mix all the liquors (using good quality vodka for this is important) with the sugar and stir until the sugar has dissolved. Then pour the liquor over the pineapple in the jar, seal with the lid, and let sit for 3 days. Strain out all of the pineapple (it will not be edible afterward). 

Chill and serve in a cocktail/martini glass. Makes 6-10 drinks depending on how you pour! I double this when making it as it will keep in the fridge indefinitely.]]></description>

3/4 cup sugar 
3/4 cup fresh lime juice 
1/2 cup water 
2 tablespoons fresh lemon juice 
2 tablespoons fresh orange juice 
2 tablespoons tequila 
2 tablespoons orange liqueur (recommended: Grand Marnier) 
Kosher salt, for garnish
Special Equipment: 4 small cups (recommended: Dixie), 4 popsicle sticks

Combine sugar, lime juice, water, lemon juice and orange juice in a small saucepan over medium heat. Cook, stirring, until sugar dissolves. Remove from heat and allow to cool. Add 1 cup fresh-squeezed strained lemon juice.
Add 2.5 cups cognac, 1.5 cups dark rum. None of the Malibu crap.
Stir well and chill in the refrigerator.
To serve - pour in a punch bowl, gently place the block of ice in, grate the nutmeg over it.

			<description><![CDATA[Dip the rim of an 8- to 10-ounce glass in lime juice and then in sugar. A tall clear-glass coffee cup with a handle is recommended. Add the 1 oz. of rum and 1 ds of Triple Sec. With a long match, carefully light the liqueurs, swirling the glass to melt the sugar on the rim. Pour in the 1 1/2 oz of Kahlua and then add the coffee to fill the glass to just under the sugared rim. Top with whipped cream and sprinkle with nutmeg. Serve immediately.

This coffee drink seems to be a Portland, Oregon tradition only. I notice that many visitors to Oregon have never heard of it. The tradition was most likely started by Huber's, a very old restaurant in old-town Portland where making these is an art and a table-side performance. I have no idea why it's called Spanish, but enjoy.
