Add a bar spoon of brown sugar and a splash of gomme (sugar syrup). Muddle until everything is mushed and smelling "minty limey". Add 2 measures (50ml) of Havana rum and put the bar spoon in the glass, flat side down. Whack in enough crushed ice to 3/4 fill the glass and mix thoroughly with the bar spoon under the ice. Remove the spoon and add a little more ice and top with soda water. Straw test it, if its a bit strong then add some lime cordial but ask the customer how they like it :)]]></description>

Prepare a tall glass by rimming it with Ginger Syrup* and Sugar. Quarter a Lime and squeeze 3 wedges into glass, toss in the peel, and add 7 to 10 mint leaves. Muddle the Mint and the Lime peel well. Fill glass with Ice.

Next, add the Rum, Lemon liqueur (preferably Lemoncello), and the Ginger Syrup* into a shaker half full of Ice and shake vigorously.  Strain into prepared glass with Lime and Mint mixture, top off with the Carbonated Water and stir well.  Garnish with Mint sprig and Lime slice.

Dissolve 1c Sugar in 1C boiling Water.  Turn heat down to low and add a 4 inch piece of ginger that has been very thinly sliced and simmer for about 20 to 30 minutes.  Cool completely and then strain.]]></description>

Garnish with one spring of mint and a lime wedge.

The reason for me giving it this name is simple, its a double decker of spirits. With Limeys (English people) on the bottom, and up top loads of American tourists!

Alternatively try it without the Cola for an extra sweet drink, however you have a regular London bus then!]]></description>
