Add 2 measures (50ml) of Havana rum and put the bar spoon in the glass, flat side down. Whack in enough crushed ice to 3/4 fill the glass and mix thoroughly with the bar spoon under the ice. Remove the spoon and add a little more ice and top with soda water. Straw test it, if its a bit strong then add some lime cordial but ask the customer how they like it :)]]></description>

Prepare a tall glass by rimming it with Ginger Syrup* and Sugar. Quarter a Lime and squeeze 3 wedges into glass, toss in the peel, and add 7 to 10 mint leaves. Muddle the Mint and the Lime peel well. Fill glass with Ice.

Next, add the Rum, Lemon liqueur (preferably Lemoncello), and the Ginger Syrup* into a shaker half full of Ice and shake vigorously.  Strain into prepared glass with Lime and Mint mixture, top off with the Carbonated Water and stir well.  Garnish with Mint sprig and Lime slice.

*TO MAKE GINGER SYRUP:
Dissolve 1c Sugar in 1C boiling Water.  Turn heat down to low and add a 4 inch piece of ginger that has been very thinly sliced and simmer for about 20 to 30 minutes.  Cool completely and then strain.]]></description>

Pour your warm water into a medium size mixing bowl.  Next pour the jello powder in and stir. Stir for about 1-3 minutes then mix in equal parts of rum.

We used Captain Morgan's rum and two boxes of cherry Jello.

Cubans that I've talked to prefer white sugar and white rum.  Apparently there is some myth about turbinado (raw) and dark rum (my favorite modifications) having "impurities".  I've found that Mexican mineral water, such as Topo Chico works well.  Good variability in bubble size, good taste, widely available here in Austin.  Get yourself a lime/lemon squeezer.  It will practically turn the lime inside out.  They make the juicing of limes quick, and they bring out some of the oils in the skin which adds to the flavor.  Use key limes, the smaller, juicier Mexican limes.

The biggest mistake bartenders make is shaking, stirring, or otherwise mixing the drink after all the ingredients are together.  DON'T.  That is for the drinker to do with their straw.  It is supposed to be stratified.

In a collins glass pinch off  6-8 basil leaves and two tablespoons of sugar. Using a muddler or a wooden spoon, smash those leaves real good (If you have a large mortar and pestal, you'll be one step ahead of any bartender-use it to grind up the basil and sugar before adding to the glass). Add the juice from half a lime. Pour in your rum. Add ice, and top with the soda water.]]></description>
