			<description><![CDATA[Prepare a shaker full of ice then add the Earl Grey infused Gin, next add the Lemon juice, next add the Simple syrup, next add the Egg white. Shake for half a minute or so. You should get a mild meringue on top when you pour.

To infuse the gin, soak 1/4 cup loose Earl Grey tea leaves in a liter of gin for 2 hours. Don't squeeze the leaves when you strain them it will make your gin bitter.

Popular at NYC's Pegu Club and the Green Street Grill in Cambridge.

Make sure the mixture is sufficiently frothy and foamy.
Strain into a tall glass, top off with the soda water, and stir.

Mix in 4.5 cups of Bailey's Irish Cream and 3 tablespoons of Pure Vanilla Extract. Mix in egg whites gradually. Add 2 teaspoons of ground cinnamon and a tablespoon of pumpkin spice. Beat well.

For best results, mix before each serving, serve cold, and add whipped cream topping with freshly ground nutmeg at a garnish.
