			<description><![CDATA[In Italy, this cocktail is made with Prosecco (Italian sparkling white wine, ever so slightly sweet), rather than Champagne, and peach juice (100% peach juice - the deliciously thick nectar, NOT sweetened watery blended juice from a carton), and absolutely no peach liqueur or schnapps. 

Pour half of the peach juice into a stemmed Champagne glass, slowly add Prosecco to 2/3 way up the glass, letting the froth settle, then top up with more peach juice. Try not to stir, as this tends to prematurely rob the Prosecco of its effervescence.
