In a tall glass, squeeze half a lemon, add 2 sliced fresh organic strawberries, and muddle with ~2 tablespoons of simple syrup (or to taste) made from turbinado sugar. Add 2 oz. of vodka (I prefer Tito's) and pour the mixture into a martini shaker with ice. Shake vigorously. Pour, ice and all, back into your tall glass. Top glass with club soda. Garnish with a sliced strawberry.
