Stir together in a saucepan 4 cups of pomegranate juice, 1/2 cup of sugar, and 2 tbsp (30ml) of lemon juice. Bring mix to a boil and boil for 45-55 minutes. To ensure proper consistency, close to the 45 minute mark, take a couple of spoonfuls and place on a plate and allow to cool for a few minutes. Once cooled, tip and plate and watch what it does. It should leave a nice coat of syrup. Check out the consistency of bottled grenadine as a comparison. It doesn't taste great but is the right consistency. Finally add an ounce of high-proof vodka or grain alcohol as a preservative. Bottle and enjoy. It should survive well in the freezer without freezing solid because of the high sugar content.
