When the glass is chilled, ditch the vermouth and the ice - down the sink, or into the next shot glass if you're being stingy. This leaves a nice coating of icy vermouth inside the glass. Fill the glass with gin (the good stuff, it's not worth using cheapies here). Add one drop (ONE!) of Angostura Bitters. Cut a strip of lemon peel a couple of inches long. Snap the peel between your fingers, over the top of the glass - you're aiming for a few tiny drops of the lemon oil to float on the surface of the shot. Down in one, and make another! |
