3 cups Stoli vodka (about a fifth) 1 cup Stoli Vanilla vodka 1 cup Malibu Rum (or other coconut rum) 1 large pineapple 1/4 cup of sugar Core, peel, and slice pineapple and place in a large jar. In a separate container mix all the liquors (using good quality vodka for this is important) with the sugar and stir until the sugar has dissolved. Then pour the liquor over the pineapple in the jar, seal with the lid, and let sit for 3 days. Strain out all of the pineapple (it will not be edible afterward). Chill and serve in a cocktail/martini glass. Makes 6-10 drinks depending on how you pour! I double this when making it as it will keep in the fridge indefinitely. |
