Dice two thirds of a lime and add to the bottom of the glass. Then add 8-10 mint leaves and 2 spoons of demerara sugar. Muddle ingredients together. Next, add 50ml of Bacardi Limon rum. Fill glass with crushed ice and and stir vigiourously to mix ingredients so leaves and lime is dispersed throught the glass. Top with ginger beer. Garnish with one spring of mint and a lime wedge. Add straw and serve. |
