Float white peach slices in vodka in freezer overnight. Rim burgundy type wine glass with vanilla and coat with sugar -- fill half way with finely crushed ice. Scoop in several slices of peach. Mix peach schnapps, lime juice, and white wine (use a Riesling or sweet white wine) and pour over ice. Finish with a mint leaf.
