Booze
2 parts Rum
Mixers
1 part Brown Sugar
1 part Soda water
A splash of Sugar syrup
A splash of Lime juice cordial
Garnishes
Lime
Mint
Ice
Directions
Crush 12 leaves of mint and 2 stems and drop them into a collins glass. Squeeze 4 wedges of lime into the glass and drop them in too. Add a bar spoon of brown sugar and a splash of gomme (sugar syrup). Muddle until everything is mushed and smelling "minty limey". Add 2 measures (50ml) of Havana rum and put the bar spoon in the glass, flat side down. Whack in enough crushed ice to 3/4 fill the glass and mix thoroughly with the bar spoon under the ice. Remove the spoon and add a little more ice and top with soda water. Straw test it, if its a bit strong then add some lime cordial but ask the customer how they like it :)

i think the lime cordial will make it too tart and sweet. The lime juice alone is usually enough of the limeyness. The mojito should be very refreshing and easy to down. I love my mojitos jammed with lime pieces and a sugar cane for the bonus point. lcastanon (708 days ago)

bubble I usually shake rather than stir a mojito, but the stylish spoon trick sounds worth a try. mojitos are all about sour/sweet/rum taste balance. It's easy to make them too sweet, but looking at your recipe it seems like it might turn out not quite as sweet as I like. More than a splash of the syrup would be good, though it depends on the strength of the syrup, and what you mean by "wedge" of lime - I usually cut a lime into quarters and squeeze all 4 into the glass, but drop just 2 in. also, what's up with the lime cordial? why not just use more real lime? here's something I wrote about the mojito: http://detritus.net/steev/mt/archives/000433.html steev (1059 days ago)
